WHEN TEX-MEX CUISINE MEETS CASILLERO DEL DIABLO

Wine drinkers would attest that every dish can be paired with a glass of wine. While others would follow a strict guide to pairing, others would leave it to the moment, considering one’s company, the occasion, and mood. At Village Tavern, Casillero del Diablo is paired with authentic Mexican and Spanish dishes prepared in Texas-style or what Bistro Corporate Chef Josh Boutwood would refer to as “Tex-Mex”. The pairing is nothing over-bearing, rather, a simple complementing gustatory experience of favorites.

The dinner starts with Chicken Tinga Empanaditas, slow cooked chicken stuffed in warm Mexican pockets, served with Casillero del Diablo Sauvignon Blanc. Hints of pears, lime, green apples and some tropical touches make this an elegant wine from the coastal areas of the Central Valley, Chile. Add a squeeze of lemon and yogurt to this dish for a burst of fresh tanginess in the palate.

For mains, Mescal Smoked Chicken is boneless leg quarter, spiced and grilled, with green rice, poblano crema and house salad. Take a bite of this tender meat and finish with Casillero del Diablo Merlot. This wine features cherries accompanied by licorice with subtle touches of vanilla and toffee, heightening the flavorful tex-mex spices. Another option is Spiced Rubbed US Prime Flank Steak and paired with Casillero del Diablo Cabernet Sauvignon. The meat is ideal with the richness of cherries and plums of this wine which is aged in French and American oak barrels, adding hints of toast and coffee notes.

Fried tacos, vanilla ice cream, and chocolate make for Sopaipillas and is nicely paired with Casillero del Diablo Cabernet Sauvignon, showcasing the wine’s versatility.
