Shrimp and Mango Salad

INGREDIENTS:

150 grams Good Life Premium Vermicelli (sotanghon)

½ kilo shrimp, cooked, peeled, and deveined

2 pcs mango peeled and cut into 1/2-inch cubes

3 stalks spring onion, chopped

1/4 cup coarsely chopped fresh basil

 

Dressing:

1/3 cup rice vinegar

2 tbsp sugar

1 1/2 tsp salt




PROCEDURE:

  1. Place Good Life Premium Vermicelli in a large bowl, cover with very hot water and soak for 10 minutes. Drain well.
  2. Meanwhile, combine the cooked shrimps, chopped spring onion, cubed mangoes and chopped fresh basil in a bowl.
  3. In a separate bowl, stir together vinegar, sugar, and salt in a measuring cup until sugar is dissolved, then toss half of sauce with noodles and half with shrimp mixture.
  4. Arrange noodles on a plate then top it with the shrimp and mango mixture.
